Chocolate-Covered Cherry “Nice” Cream Recipe

Late summer is the perfect time to grab fresh, in-season cherries. They are high in antioxidants that reduce inflammation and aid in disease prevention and exercise recovery. Cherries also contain melatonin, which helps regulate our natural sleep cycle and are high in vitamins and minerals. This recipe also includes dark chocolate (70% cacao or greater) with antioxidants that improve blood flow.
If you’re looking for a way to enjoy the taste of ice cream without all the fat and sugar, give this “nice” cream recipe a try.
Ingredients:
2 ripe bananas, peeled, sliced and frozen
1 1/2 cups of cherries, fresh or frozen – make sure they are pitted!
Splash of milk or non-dairy milk of your choice
1/4 cup of dark chocolate, chopped
Directions:
Add the bananas, 1 cup of the cherries and a couple tablespoons of milk to a food processor. Blend until smooth and the consistency of soft-serve ice cream. Add the remaining 1/2 cup of cherries and chocolate chunks to the food processor. Pulse to incorporate, leaving a few small chunks of chocolate and cherry for texture.

Enjoy this treat straight out of the food processor as a nice, soft ice cream or scoop into a container with a lid and place it in the freezer for a few hours to get a firmer texture.
