Recipe: Apple Cinnamon Blender Muffins

Try these Apple Cinnamon Blender Muffins from Laura Rutledge.

Ingredients:

2 cups old-fashioned oats

8 dates, pitted

½ cup canola oil

¼ cup maple syrup or honey

2 small apples (or 1 large), chopped (leave the peel on)

2 eggs

1 tsp baking soda

1 tsp cinnamon

Pinch of salt

 

Preheat oven to 350 degrees Fahrenheit.

Place all ingredients in a blender and pulse until a slightly chunky batter forms.

Pour batter into a lined or greased muffin tin (will fill about 9-10 muffin cups). Bake for 25-28 minutes or until the top gently springs back when pressing lightly.
